Mycobacterium spp. in naturally infected game meat and organs.

چکیده

T valued comments from Prof. Wiwanitkit echo the selfcriticism of the authors on the topic. The study aimed to investigate the survival potential of M. bovis in dried meat. The most effective or ideal food preparation method was not discussed but was recommended for further study. It must be emphasised, however, that no pathogens – only non-tuberculous mycobacteria – were isolated from the processed samples. In the opinion of the authors, the size and volume of the samples affected the ability of the processes to destroy the pathogen. A study to investigate different processes is, therefore, currently in the proposal phase (focusing on food density, temperature, exposure time and Aw) to test this hypothesis. Biltong is a dry food with a high Aw (according to taste) preferred by some consumers. Carpaccio is raw, thinly sliced game meat and this undercooked game fillet is served in many local restaurants and lodges. Such foods are a delicacy in South Africa and avoidance of it, especially in a protein-deficient continent, is therefore rightfully correctly perceived to be unacceptable. Prof. Wiwanitkit is advised to obtain a previous publication, namely that of M Van Der Merwe, J L Bekker, P Van Der Merwe and A L Michel on ‘Cooking and drying as effective mechanisms in limiting the zoonotic effect of Mycobacterium bovis in beef ’ (Journal of the South African Veterinary Association (2009) 80: 142–145). In that study, the survival of M. bovis was investigated in spiked approved beef and, alarmingly enough, it survived the cooking and drying processes. We would like to invite Prof. Wiwanitkit to contact me personally to discuss future work.

An investigation of the effects of secondary processing on Mycobacterium spp. in naturally infected game meat and organs.

The risk for humans to contract bovine tuberculosis through the consumption of undercooked game meat as well as biltong (traditionally dried game meat) is a concern. The survival potential of Mycobacterium bovis during the cooking and drying processes was researched in a preceding study on beef and the positive results compelled the authors to investigate the results with a similar preliminary ...

Ultrastructural and molecular studies on fat and thin macrocysts of Sarcocystis spp. isolated from naturally infected goats

There is considerable confusion concerning the structure and synonymity of macroscopic sarcocysts in goats. In the present work, ultrastructural and molecular study on fat and thin macrocysts of Sarcocystis isolated from naturally infected goats were investigated. Two forms of macrocystic sarcocysts were collected from fresh oesophagus, diaphragm, skeletal muscles and heart of slaughtered goats...

A study of hematological changes in sheep naturally infected with Anaplasma spp. and Theileria ovis: Molecular diagnosis

BACKGROUND: Ovine anaplasmosis and theileriosis are important tick-borne diseases of sheep and goats which are distributed in the tropical and subtropical areas of the world. OBJECTIVES: This study was performed to assess hematological status in sheep naturally infected with Anaplasma and Theileria spp. to clarify the pathogenic aspects of various species involved in ovine anaplasmosis and thei...

Experimental Inoculation of BFDV-Positive Budgerigars (Melopsittacus undulatus) with Two Mycobacterium avium subsp. avium Isolates

Beak and feather disease virus- (BFDV-) positive (naturally infected) but clinically healthy budgerigars (Melopsittacus undulatus) were inoculated with two isolates of Mycobacterium avium subsp. avium isolated from naturally infected golden pheasant (Chrysolophus pictus) and peafowl (Pavo cristatus). During a period of more than two months after inoculation, samples of cloacal and crop swabs, f...

High Occurrence of Sarcocystis Cysts in Meat Produced in Yazd, Central Iran

Background: Sarcocystosis is one of the most widespread parasitic diseases in cattle caused by three main species of Sarcocystis genus. The major aim of this study was to determine the prevalence of Sarcocystis spp. in meat produced in Yazd, central Iran with special reference to species identification, using Polymerase Chain Reaction-Restriction Fragment Length Polymorphism (PCR-RFLP).  ...
